Pumpkin Muffin Recipe

Ingredients

Pumpkin (120g)

Egg (1)

Sugar (50g)

Vanilla extract (5mL)

Milk (60mL)

Cake flour (150g)

Vegetable oil (45mL)

Baking powder (3g)

Melted margarine/butter

Instructions

1. Preheat the oven to 180°C/355°F.

2. Use the margarine or butter to grease the muffin pan.

3. Mix all the dry ingredients in a bowl (flour and baking powder).

4. In another bowl, mix the pumpkin and vegetable oil. Then, add sugar and stir.

5. Add eggs and vanilla, and stir.

6. Combine the wet and dry ingredients until batter is smooth.

6a. Add any extra add-ins like chocolate chips, nuts, raisins, etc.

7. Pour batter into muffin tin and bake for 20 minutes.

8. Once they are done baking, let them cool for 10 minutes.
